Chicken Kottu

Ingredients (serves 4)

  • 2 tbsp vegetable oil
  • ½ medium onion
  • 3 garlic cloves, chopped
  • 1 tbsp ginger, chopped
  • 2 large jalapenos, halved and sliced
  • 1 cup sliced leeks, white part only
  • ¼ cabbage, shredded or grated
  • 2 heaped cups of shredded cooked chicken
  • 2 tsp Sri Lankan Masala mix
  • ¼ tsp black pepper
  • ½ tsp cayenne pepper
  • ½ tsp ground cinnamon
  • 1 cup grated carrots
  • 3 eggs
  • 500g chopped roti or chopped wraps
  • Salt
  • Pepper

Steps

  1. Heat the oil in a large wok or pan.
  2. When the oil is heated, add the onion ,and sauté until softened.
  3. Add the ginger and garlic, and sauté for a few seconds.
  4. Add all the vegetables apart from the carrots, salt to taste, and stir fry for a few minutes.
  5. Add the chicken, cayenne pepper, Sri Lankan Masala, jalapenos, black pepper, and ground cinnamon.
  6. Stir fry until the vegetables start to soften.
  7. Add the carrots and mix. Taste, and add any seasoning you require.
  8. Whisk the eggs together in a bowl and season with a pinch of salt.
  9. Add the eggs to the vegetable mix, scramble and mix in
  10. Add the chopped roti and mix through with the vegetables and chicken.
  11. Continue mixing on the heat for a few minutes.
