Ingredients (serves 4)
- 2 tbsp vegetable oil
- ½ medium onion
- 3 garlic cloves, chopped
- 1 tbsp ginger, chopped
- 2 large jalapenos, halved and sliced
- 1 cup sliced leeks, white part only
- ¼ cabbage, shredded or grated
- 2 heaped cups of shredded cooked chicken
- 2 tsp Sri Lankan Masala mix
- ¼ tsp black pepper
- ½ tsp cayenne pepper
- ½ tsp ground cinnamon
- 1 cup grated carrots
- 3 eggs
- 500g chopped roti or chopped wraps
- Salt
- Pepper
Steps
- Heat the oil in a large wok or pan.
- When the oil is heated, add the onion ,and sauté until softened.
- Add the ginger and garlic, and sauté for a few seconds.
- Add all the vegetables apart from the carrots, salt to taste, and stir fry for a few minutes.
- Add the chicken, cayenne pepper, Sri Lankan Masala, jalapenos, black pepper, and ground cinnamon.
- Stir fry until the vegetables start to soften.
- Add the carrots and mix. Taste, and add any seasoning you require.
- Whisk the eggs together in a bowl and season with a pinch of salt.
- Add the eggs to the vegetable mix, scramble and mix in
- Add the chopped roti and mix through with the vegetables and chicken.
- Continue mixing on the heat for a few minutes.
